This is our second best value in ordering our premium grass-fed and finished beef. Meat will be cut according to our standard cutting instructions or based on custom instructions you supply.

This $200 deposit will secure your animal and will be deducted from the final amount. The remaining balance will be due when the meat is ready for pickup. Pricing for a quarter steer is $6.50 per pound hanging weight. Normal processing charges and delivery to Viola Farm are included in the total price/lb.

To order, you will be required to submit a $200 deposit online. After the deposit is collected, we will contact you with schedule, pick-up details, and any other additional information. A final invoice for the remaining balance will be due upon pick up of the meat at Viola Farm.

You can either choose our standard cutting instructions or submit your own custom cutting instructions with Solar Meats. Packed beef will be ready for pick up at Viola Farm 1-4 weeks AFTER harvest date.

FAQs on Ordering a 1/4 Beef Side:

Viola Farm sells 1/4 beef animals by hanging weight. This side of 100% Grass-fed Beef that is cryovac-sealed and frozen.

Pricing is determined by the hanging weight of your animal. Hanging weight is the actual weight of the animal shortly after it is slaughtered, minus skin, head, and most internal organs.

What you receive should be approximately 60-65 percent of the hanging weight, depending on the cutting instructions you choose and the items you accept or decline.

An example/average based on past experience, beginning with a 1,100-lb live, “finished” animal:

– 700-lb (whole) hanging weight carcass is cut into (4) 175-lb “sides,” each of which become…

– 100-115 lbs of finished, table-ready meat.

The actual finished weight you receive will depend on the size of your particular animal and on your cutting instructions. If you have everything deboned, and decline your soup/dog bones, organs, etc., your yield will be closer to 60%. If you take everything you have coming, and choose bone-in cuts, your yield could be as high as 75-80%. Regardless of cutting instructions, there will also always be a “shrink” or water weight loss, as the carcass hangs for 10 days prior to being cut, during which time it loses moisture (but gains flavor and tenderness).

The size of your carcass may vary but the yield percentages will usually remain in the 60-65% range. A rough guide to calculating freezer space needed is that 30 lbs of packaged meat takes up ~1 cubic foot of freezer space. So, a side of beef that yields 100-120 lbs will require 3 - 4 cubic feet of freezer space.

The Process:

  1. Reserving Your Quarter- You need to reserve in advance by placing deposit of $200 through our online store. This deposit will be deducted from your final invoice when your beef is ready.

  2. Providing Cutting Instructions- Animals will go to harvest and while your beef is dry aging, you will call our processor (Solar Meats) to go through cutting instructions, or choose our Standard Cutting option. We will notify you when to make the call and give you tips along the way. Don't worry! This is an easy process and an opportunity for you to choose what you want!

  3. Picking up your Beef at Viola Farm - After this, your beef should be ready within a week to four weeks. Processing time depends on Solar Meats. We will notify you when the meat will be ready for you to pick it up directly at Viola Farm in Hartland, WI.

  4. Paying your final invoice- Around this time, you will receive our final invoice for the beef and instructions on payment.
